Instructions
- Rinse quinoa under cold water.

- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and avocado.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add quinoa to the vegetable mixture and drizzle with dressing.
- Toss gently to combine and serve.
