Ingredients

- 2 lbs of meat (beef, chicken, or lamb)
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 inch ginger, minced
- 2 large tomatoes, diced
- 2 cups of vegetable broth
- 1 tablespoon of vegetable oil
- 2 teaspoons of paprika
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- Salt and pepper to taste
- 1 cup of leafy greens (spinach or kale)
Instructions
- Heat the oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until softened.
- Add the meat and brown on all sides.
- Stir in the diced tomatoes, paprika, cumin, and coriander.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer for 1 hour.
- Add leafy greens and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
