  • Salt and pepper to taste
  • 1 cup of leafy greens (spinach or kale)

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until softened.
  3. Add the meat and brown on all sides.
  4. Stir in the diced tomatoes, paprika, cumin, and coriander.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and let it simmer for 1 hour.
  7. Add leafy greens and cook for an additional 10 minutes.
  8. Season with salt and pepper to taste.
