Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 pound beef or chicken, cubed
- 4 cups bone broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon thyme
- 1 bay leaf
- 2 cups vegetables of choice (e.g., zucchini, spinach)
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, carrot, and celery; sauté until soft.
- Add garlic and meat; cook until browned.
- Pour in bone broth; add salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add vegetables and simmer for another 10 minutes.
- Remove bay leaf before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This soup can be frozen for up to 3 months.
- Adjust vegetables based on seasonal availability.
