- 2 cups dried beans (any variety)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
Instructions
- Soak beans overnight in water.
- Drain and rinse the beans.
- In a large pot, sauté onion and garlic until soft.
- Add carrots and celery, cooking for five minutes.
- Add soaked beans, broth, tomatoes, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1-2 hours.
- Blend if desired for a smoother texture.
- Serve hot.

- Add spices to taste.
