Ingredients

- 1 lb beef shank
- 6 cups beef broth
- 2 cups water
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 2 cups noodles
- 1 cup bok choy
- Green onions, chopped for garnish
Instructions
- In a large pot, combine beef shank, beef broth, water, onion, garlic, and ginger.
- Bring to a boil and then reduce to a simmer for 2 hours.
- Add soy sauce, fish sauce, and sugar to the pot.
- Remove beef, shred it, and set aside.
- Cook noodles according to package instructions.
- Add bok choy to the broth and cook for an additional 5 minutes.
- Serve noodles in bowls, topped with broth and shredded beef.
- Garnish with green onions.
