  • 2 cups noodles
  • 1 cup bok choy

Instructions

  1. In a large pot, combine beef shank, beef broth, water, onion, garlic, and ginger.
  2. Bring to a boil and then reduce to a simmer for 2 hours.
  3. Add soy sauce, fish sauce, and sugar to the pot.
  4. Remove beef, shred it, and set aside.
  5. Cook noodles according to package instructions.
  6. Add bok choy to the broth and cook for an additional 5 minutes.
  7. Serve noodles in bowls, topped with broth and shredded beef.
  8. Garnish with green onions.
