- 2 lbs beef shank
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (160°C).
- Season the beef shank with salt and pepper.
- In a large pot, brown the beef shank on all sides.
- Add onion and garlic, sauté until softened.
- Add carrots, celery, and cook for a few minutes.
- Stir in diced tomatoes, beef broth, thyme, and bay leaf.
- Bring to a simmer, cover, and transfer to the oven.
- Cook for 2.5 to 3 hours until the meat is tender.
- Remove bay leaf before serving.
