Ingredients

- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 can diced tomatoes
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Brown the beef in a large pot over medium heat.
- Add onion, carrots, celery, and garlic; cook until softened.
- Pour in beef broth and add diced tomatoes.
- Add bay leaves and thyme, then bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours.
- Season with salt and pepper before serving.
