Description

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot, sauté until soft.
  5. Stir in tomato paste, then return beef to the pot.
  6. Add beef broth, carrots, potatoes, thyme, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  8. Season with salt and pepper before serving.

Notes

  • For a thicker stew, add a cornstarch slurry.
  • Let it sit overnight for better flavor.
