- 2 pounds potatoes
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 3 hard-boiled eggs, chopped
- Salt to taste
- Pepper to taste
Instructions
- Boil the potatoes until tender, about 15-20 minutes.
- Drain and let them cool, then peel and chop into cubes.
- In a large bowl, mix mayonnaise and Dijon mustard.
- Add chopped celery, onion, and eggs to the bowl.
- Add the cooled potatoes and mix gently.
- Season with salt and pepper.
- Chill in the refrigerator for at least 1 hour before serving.
