Ingredients

- 2 cups of cherry tomatoes
- 1 cucumber, diced
- 1 bell pepper, chopped
- 1 cup of quinoa, rinsed
- 2 cups of water
- 1/4 cup of olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Cook quinoa in water according to package instructions.
- Chop vegetables while quinoa cooks.
- In a large bowl, combine cooked quinoa and vegetables.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss well to combine.
- Serve chilled or at room temperature.

- Optional: add feta cheese for extra flavor.
- Can be stored in the fridge for up to 3 days.
