- 2 cups water
- 1 cup black beans, rinsed
- 1 cup corn, canned or frozen
- 1 bell pepper, diced

Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, mix quinoa, black beans, corn, bell pepper, cumin, salt, and pepper.
- Serve chilled or at room temperature.
