Ingredients

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, mix quinoa, black beans, corn, bell pepper, cumin, salt, and pepper.
  6. Serve chilled or at room temperature.
