Ingredients

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil.
  3. Add quinoa and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. Remove from heat and let it sit for 5 minutes.
  6. Fluff quinoa with a fork.
  7. In a bowl, combine quinoa, tomatoes, cucumber, and bell pepper.
  8. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  9. Pour dressing over salad and mix well.
  10. Serve chilled or at room temperature.
