Tender and flavorful braised short ribs that melt in your mouth.
Ingredients

- 4 pounds short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C).
- Season short ribs with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Sear short ribs on all sides until browned.
- Remove ribs and set aside.
- Add onion, carrots, celery, and garlic to the pot. Sauté until softened.
- Stir in beef broth, red wine, tomato paste, thyme, and bay leaves.
- Return short ribs to the pot.
- Cover and transfer pot to the oven.
- Braise for 3 hours or until ribs are tender.
- Remove from oven and let rest before serving.
Notes
- Serve with mashed potatoes or polenta.
- Can be made a day ahead and reheated.
