Ingredients

- 3–4 lbs corned beef brisket
- 4 cups water
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tablespoon black peppercorns
- 1 tablespoon mustard seeds
- 1 teaspoon thyme
Instructions
- Place corned beef in the slow cooker.
- Add water, onion, carrots, celery, and garlic.
- Sprinkle peppercorns, mustard seeds, and thyme over the top.
- Cover and cook on low for 8-10 hours.
- Remove the beef and let it rest for 10 minutes before slicing.
Notes
- Serve with cabbage or potatoes for a complete meal.
- Store leftovers in the refrigerator for up to 3 days.
