Description
A festive dish for St. Patrick’s Day celebration.
Ingredients

- 2 cups of cabbage, chopped
- 1 lb of corned beef, cooked and sliced
- 4 potatoes, peeled and diced
- 1 cup of carrots, sliced
- 1 onion, chopped
- 4 cups of beef broth
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and sauté until translucent.
- Add potatoes and carrots, cooking for about 5 minutes.
- Pour in beef broth and bring to a boil.
- Add cabbage and corned beef, stirring gently.
- Season with salt and pepper.
- Reduce heat and simmer for 30 minutes or until vegetables are tender.
- Serve hot.
Notes
- Adjust seasoning to your taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish pairs well with Irish soda bread.
