- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix spinach, cream cheese, mozzarella, parmesan, garlic, Italian seasoning, salt, and pepper.
- Cut a pocket in each chicken breast.
- Stuff each pocket with the cheese mixture.
- Heat olive oil in a pan over medium heat.
- Sear the chicken on both sides until golden brown.
- Transfer chicken to a baking dish and bake for 25-30 minutes.
- Let rest for 5 minutes before serving.
