Ingredients

  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix spinach, cream cheese, mozzarella, parmesan, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket in each chicken breast.
  4. Stuff each pocket with the cheese mixture.
  5. Heat olive oil in a pan over medium heat.
  6. Sear the chicken on both sides until golden brown.
  7. Transfer chicken to a baking dish and bake for 25-30 minutes.
  8. Let rest for 5 minutes before serving.
