Description

A refreshing veggie pasta salad packed with colorful vegetables.


Ingredients

  • 2 cups of pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. Drain and rinse with cold water.
  3. In a large bowl, combine the pasta and vegetables.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
