  • 1 cup rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup chocolate chips or nuts (optional)

Instructions

  1. In a mixing bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth.
  2. Add the rolled oats, baking powder, salt, and cinnamon (if using) to the banana mixture. Stir until well combined. Fold in chocolate chips or nuts if desired.
  3. Preheat the air fryer to 320°F (160°C) for about 3-5 minutes.
  4. Scoop tablespoon-sized portions of the cookie dough onto a piece of parchment paper or directly into the air fryer basket. Make sure to leave some space between each cookie.
  5. Air fry the cookies at 320°F (160°C) for 8-10 minutes, or until they are golden brown and set.
  6. Remove the cookies from the air fryer and let them cool on a wire rack before serving.
