Description
Delicious, cheesy quesadillas filled with seasoned beef, cooked to perfection in an air fryer.
Ingredients

- 1 lb ground beef
- 1 tsp taco seasoning
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced bell peppers (optional)
- 1/2 cup diced onions (optional)
- Cooking spray or olive oil
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning to the beef and mix well. Cook for another 2-3 minutes.
- Lay one tortilla flat and sprinkle half of the cheese over one half of the tortilla.
- Add a portion of the beef mixture on top of the cheese, followed by any optional bell peppers and onions.
- Sprinkle the remaining cheese on top of the beef mixture, then fold the tortilla in half.
- Repeat with remaining tortillas and filling.
- Preheat the air fryer to 350°F (175°C).
- Spray the air fryer basket with cooking spray or lightly brush with olive oil.
- Place the quesadillas in the basket. Make sure they are not overlapping.
- Cook for 5-7 minutes, flipping halfway through until golden brown and crispy.
- Remove from the air fryer and let them cool for a minute before slicing.
Notes
- You can customize the filling with your favorite ingredients like black beans, corn, or jalapeños.
- Serve with salsa, sour cream, or guacamole for dipping.
