Description

Delicious, cheesy quesadillas filled with seasoned beef, cooked to perfection in an air fryer.


Ingredients

  • 1 lb ground beef
  • 1 tsp taco seasoning
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)
  • Cooking spray or olive oil

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning to the beef and mix well. Cook for another 2-3 minutes.
  3. Lay one tortilla flat and sprinkle half of the cheese over one half of the tortilla.
  4. Add a portion of the beef mixture on top of the cheese, followed by any optional bell peppers and onions.
  5. Sprinkle the remaining cheese on top of the beef mixture, then fold the tortilla in half.
  6. Repeat with remaining tortillas and filling.
  7. Preheat the air fryer to 350°F (175°C).
  8. Spray the air fryer basket with cooking spray or lightly brush with olive oil.
  9. Place the quesadillas in the basket. Make sure they are not overlapping.
  10. Cook for 5-7 minutes, flipping halfway through until golden brown and crispy.
  11. Remove from the air fryer and let them cool for a minute before slicing.

Notes

  • You can customize the filling with your favorite ingredients like black beans, corn, or jalapeños.
  • Serve with salsa, sour cream, or guacamole for dipping.
