- 1 pound beef sirloin, cut into 1-inch cubes
- 1 bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Skewers (soaked in water if wooden)
Instructions
- In a large bowl, combine the beef cubes, bell pepper, zucchini, and red onion.
- In a small bowl, whisk together the olive oil, garlic powder, paprika, salt, and pepper.
- Pour the marinade over the beef and vegetables, and toss to coat evenly. Let it marinate for at least 30 minutes.
- Preheat the air fryer to 400°F (200°C).
- Thread the marinated beef and vegetables onto the skewers, alternating between beef and veggies.
- Place the skewers in the air fryer basket in a single layer, making sure they are not overcrowded.
- Cook for 10-12 minutes, turning halfway through, until the beef is cooked to your desired doneness and the vegetables are tender.
- Remove from the air fryer and let them rest for a few minutes before serving.
Notes
- For extra flavor, try adding your favorite herbs or spices to the marinade.
- You can use any combination of vegetables based on your preference, such as cherry tomatoes or mushrooms.
- Make sure to soak wooden skewers in water for at least 30 minutes to prevent burning.
