Ingredients

  • 1 pound beef sirloin, cut into 1-inch cubes
  • 1 bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced into thick rounds
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)

Instructions

  1. In a large bowl, combine the beef cubes, bell pepper, zucchini, and red onion.
  2. In a small bowl, whisk together the olive oil, garlic powder, paprika, salt, and pepper.
  3. Pour the marinade over the beef and vegetables, and toss to coat evenly. Let it marinate for at least 30 minutes.
  4. Preheat the air fryer to 400°F (200°C).
  5. Thread the marinated beef and vegetables onto the skewers, alternating between beef and veggies.
  6. Place the skewers in the air fryer basket in a single layer, making sure they are not overcrowded.
  7. Cook for 10-12 minutes, turning halfway through, until the beef is cooked to your desired doneness and the vegetables are tender.
  8. Remove from the air fryer and let them rest for a few minutes before serving.
