Description
Delicious and easy-to-make beef stuffed peppers cooked in an air fryer for a quick weeknight dinner.

- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes, drained
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your air fryer to 360°F (182°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large mixing bowl, combine the ground beef, cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Stuff each bell pepper with the beef mixture, pressing down gently to pack it in.
- Spray the outside of the peppers with olive oil spray.
- Place the stuffed peppers in the air fryer basket, standing upright.
- Cook for 15-20 minutes, or until the beef is cooked through and the peppers are tender.
- In the last 5 minutes of cooking, sprinkle shredded cheese on top of each pepper and cook until melted.
- Remove from the air fryer and let cool for a few minutes before serving.
Notes
- You can substitute ground turkey or chicken for a lighter option.
- Feel free to add other vegetables to the beef mixture, like diced onions or mushrooms.
- For extra flavor, add some hot sauce or Worcestershire sauce to the beef mixture.
