Description

Delicious and easy-to-make beef stuffed peppers cooked in an air fryer for a quick weeknight dinner.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your air fryer to 360°F (182°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large mixing bowl, combine the ground beef, cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Stuff each bell pepper with the beef mixture, pressing down gently to pack it in.
  5. Spray the outside of the peppers with olive oil spray.
  6. Place the stuffed peppers in the air fryer basket, standing upright.
  7. Cook for 15-20 minutes, or until the beef is cooked through and the peppers are tender.
  8. In the last 5 minutes of cooking, sprinkle shredded cheese on top of each pepper and cook until melted.
  9. Remove from the air fryer and let cool for a few minutes before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter option.
  • Feel free to add other vegetables to the beef mixture, like diced onions or mushrooms.
  • For extra flavor, add some hot sauce or Worcestershire sauce to the beef mixture.
