Ingredients

Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and scrub the beets thoroughly to remove any dirt.
- Trim the tops and tails of the beets, and cut them into evenly sized cubes.
- In a bowl, toss the beet cubes with olive oil, salt, pepper, and any herbs if using.
- Place the seasoned beets in the air fryer basket in a single layer.
- Air fry the beets for 15-20 minutes, shaking the basket halfway through for even cooking.
- Check for tenderness with a fork; they should be easily pierced but not mushy.
- Remove the beets from the air fryer and let them cool slightly before serving.
