- 6 large eggs
- 1/2 cup milk
- 1 cup diced vegetables (bell peppers, spinach, onions, etc.)
- 1 cup cooked and crumbled bacon or sausage (optional)
- 1 cup shredded cheese (cheddar, mozzarella, etc.)
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat your air fryer to 270°F (130°C).
- In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
- Grease a muffin tin with non-stick cooking spray.
- Pour the egg mixture evenly into the muffin tin, filling each cup about halfway.
- Add your diced vegetables and cooked meat (if using) to each cup. Top with shredded cheese.
- Place the muffin tin in the air fryer basket and cook for 10-12 minutes, or until the egg cups are set and lightly golden on top.
- Carefully remove the muffin tin from the air fryer and let it cool for a few minutes before removing the egg cups.
- Serve warm or store in the refrigerator for meal prep.
Notes
- Feel free to customize your egg cups with different vegetables, meats, and cheeses.
- These can be made ahead of time and stored in the fridge for quick breakfasts throughout the week.
