Ingredients

  • 1/2 cup milk
  • 1 cup diced vegetables (bell peppers, spinach, onions, etc.)
  • 1 cup cooked and crumbled bacon or sausage (optional)
  • 1 cup shredded cheese (cheddar, mozzarella, etc.)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your air fryer to 270°F (130°C).
  2. In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  3. Grease a muffin tin with non-stick cooking spray.
  4. Pour the egg mixture evenly into the muffin tin, filling each cup about halfway.
  5. Add your diced vegetables and cooked meat (if using) to each cup. Top with shredded cheese.
  6. Place the muffin tin in the air fryer basket and cook for 10-12 minutes, or until the egg cups are set and lightly golden on top.
  7. Carefully remove the muffin tin from the air fryer and let it cool for a few minutes before removing the egg cups.
