Ingredients

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon (optional)
  • Sour cream and chopped green onions for serving

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them several times with a fork.
  3. Rub the potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
  4. Place the potatoes in the air fryer basket and cook for 35-40 minutes, or until fork-tender.
  5. Remove the potatoes and let them cool for a few minutes. Once cool enough to handle, slice each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer.
  6. Return the potato halves to the air fryer basket, skin-side down, and sprinkle shredded cheese and crumbled bacon (if using) on top.
  7. Cook in the air fryer for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Serve warm with sour cream and chopped green onions on top.

Notes

  • For extra crispy skins, you can spray the potato skins with cooking spray before adding cheese.
