Ingredients

  • 1 lb Chicken breast
  • 2 tablespoons Soy sauce
  • 1/4 cup Coconut milk
  • 1 tablespoon Brown sugar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1/2 teaspoon Salt
  • 1/2 cup Peanut butter
  • 2 tablespoons Lime juice
  • 23 tablespoons Water
  • to taste Chili flakes
  • 6 Skewers

Instructions

  1. In a bowl, mix together soy sauce, coconut milk, brown sugar, garlic powder, cumin, coriander, and salt.
  2. Add the chicken strips to the marinade and let it sit for at least 30 minutes, or overnight for best results.
  3. Preheat the air fryer to 400°F (200°C).
  4. Thread the marinated chicken onto the soaked skewers.
  5. Place the skewers in the air fryer basket in a single layer. Cook for 10-12 minutes, turning halfway through, until the chicken is cooked through and slightly charred.
  6. While the chicken cooks, prepare the peanut sauce by whisking together peanut butter, lime juice, and water until smooth. Adjust the consistency with more water if needed. Add chili flakes to taste.
  7. Serve the chicken satay with the peanut sauce for dipping.

Notes

  • For extra flavor, marinate the chicken overnight.
  • You can add vegetables like bell peppers or onions to the skewers for added nutrition.
  • If you don’t have an air fryer, these can also be grilled or baked in the oven.
