- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow dish, mix together the flour, garlic powder, paprika, salt, and pepper.
- In a second shallow dish, beat the eggs.
- In a third shallow dish, combine the shredded coconut and panko breadcrumbs.
- Dredge each shrimp in the flour mixture, shaking off the excess.
- Dip the floured shrimp into the beaten eggs, allowing excess to drip off.
- Coat the shrimp in the coconut-panko mixture, pressing gently to adhere.
- Place the coated shrimp in a single layer in the air fryer basket. Spray lightly with non-stick cooking spray.
- Air fry for 8-10 minutes, flipping halfway through, until the shrimp are golden brown and crispy.
- Serve warm with your favorite dipping sauce.
Notes
- For extra flavor, marinate the shrimp in lime juice and spices for 30 minutes before coating.
- Adjust the cooking time based on the size of your shrimp; larger shrimp may require additional time.
