Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow dish, mix together the flour, garlic powder, paprika, salt, and pepper.
  3. In a second shallow dish, beat the eggs.
  4. In a third shallow dish, combine the shredded coconut and panko breadcrumbs.
  5. Dredge each shrimp in the flour mixture, shaking off the excess.
  6. Dip the floured shrimp into the beaten eggs, allowing excess to drip off.
  7. Coat the shrimp in the coconut-panko mixture, pressing gently to adhere.
  8. Place the coated shrimp in a single layer in the air fryer basket. Spray lightly with non-stick cooking spray.
  9. Air fry for 8-10 minutes, flipping halfway through, until the shrimp are golden brown and crispy.
  10. Serve warm with your favorite dipping sauce.

Notes

  • For extra flavor, marinate the shrimp in lime juice and spices for 30 minutes before coating.
  • Adjust the cooking time based on the size of your shrimp; larger shrimp may require additional time.
