- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko bread crumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 small corn or flour tortillas
- 1 cup shredded cabbage
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a bowl, combine the flour, garlic powder, paprika, salt, and black pepper.
- In a separate bowl, beat the eggs.
- In another bowl, place the shredded coconut and panko bread crumbs and mix well.
- Dip each shrimp first in the flour mixture, then in the beaten eggs, and finally in the coconut mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C).
- Arrange the coated shrimp in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Air fry the shrimp for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Warm the tortillas in a skillet or microwave.
- Assemble the tacos by placing a few shrimp on each tortilla, topped with shredded cabbage, salsa, and cilantro.
- Serve with lime wedges on the side.
Notes
- For extra flavor, marinate the shrimp in lime juice and seasonings for 30 minutes before coating.
- Feel free to use different types of tortillas or add toppings like avocado or shredded cheese.
