  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko bread crumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. In a bowl, combine the flour, garlic powder, paprika, salt, and black pepper.
  2. In a separate bowl, beat the eggs.
  3. In another bowl, place the shredded coconut and panko bread crumbs and mix well.
  4. Dip each shrimp first in the flour mixture, then in the beaten eggs, and finally in the coconut mixture, pressing gently to adhere.
  5. Preheat the air fryer to 400°F (200°C).
  6. Arrange the coated shrimp in a single layer in the air fryer basket. Spray lightly with cooking spray.
  7. Air fry the shrimp for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  8. Warm the tortillas in a skillet or microwave.
  9. Assemble the tacos by placing a few shrimp on each tortilla, topped with shredded cabbage, salsa, and cilantro.
  10. Serve with lime wedges on the side.

Notes

  • For extra flavor, marinate the shrimp in lime juice and seasonings for 30 minutes before coating.
  • Feel free to use different types of tortillas or add toppings like avocado or shredded cheese.
