Deliciously crispy on the outside and soft on the inside, these Air Fryer Crispy Polenta Bites are the perfect snack or appetizer.

- 1 cup polenta
- 4 cups water
- 1 teaspoon salt
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- Olive oil spray
Instructions
- In a saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt.
- Gradually whisk in the polenta, stirring continuously to avoid lumps. Cook for about 5 minutes until thickened.
- Remove from heat and stir in Parmesan cheese, garlic powder, Italian seasoning, and black pepper.
- Pour the polenta into a greased baking dish and spread evenly. Let cool to room temperature, then refrigerate for at least 1 hour until firm.
- Once firm, cut the polenta into bite-sized squares or shapes.
- Preheat your air fryer to 400°F (200°C).
- Spray the polenta bites lightly with olive oil spray on both sides.
- Working in batches, place the polenta bites in the air fryer basket in a single layer.
- Air fry for 10-12 minutes until golden and crispy, flipping halfway through.
- Serve warm with your favorite dipping sauce.
