Crispy and delicious air fryer egg rolls filled with savory cabbage and beef, perfect for a quick snack or appetizer.
Ingredients

- 1 pound ground beef
- 2 cups shredded cabbage
- 1 medium carrot, shredded
- 3 green onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
- 12 egg roll wrappers
- Cooking spray
Instructions
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add shredded cabbage, carrot, green onions, garlic, soy sauce, sesame oil, and ginger to the skillet. Cook until vegetables are tender, about 5-7 minutes.
- Remove the mixture from heat and let it cool slightly.
- Lay an egg roll wrapper on a clean surface, with one corner facing you. Place 2-3 tablespoons of the beef and cabbage mixture in the center.
- Fold the corner over the filling, then fold in the sides and roll tightly. Seal the edge with a little water. Repeat with remaining wrappers and filling.
- Preheat the air fryer to 400°F (200°C). Lightly spray the basket with cooking spray.
- Place the egg rolls in the air fryer basket in a single layer, making sure not to overcrowd.
- Spray the tops of the egg rolls with cooking spray.
- Cook for 10-15 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
Notes
- For a vegetarian option, substitute ground beef with cooked tofu or mushrooms.
- Serve with sweet and sour sauce or soy sauce for dipping.
