Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup blueberries (or other desired mix-ins)
Instructions
- Preheat your air fryer to 320°F (160°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, vegetable oil, egg, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the blueberries (or other mix-ins).
- Spoon the batter into silicone muffin cups, filling each about 2/3 full.
- Place the muffin cups in the air fryer basket and cook for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes before removing from the cups. Enjoy!
Notes
- You can substitute the blueberries with chocolate chips, nuts, or any other fruit you prefer.
- Make sure to check the muffins a minute or two early, as cooking times can vary with different air fryer models.
