A quick and easy recipe for delicious mushroom and spinach quesadillas made in the air fryer.


Ingredients

  • 2 large flour tortillas
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté the mushrooms until they are soft and golden brown, about 5 minutes.
  3. Add the chopped spinach and garlic powder to the mushrooms, cooking until the spinach is wilted. Season with salt and pepper to taste.
  4. On one tortilla, layer half of the cheese, then spread the mushroom and spinach mixture evenly over it.
  5. Top with the remaining cheese and place the second tortilla on top.
  6. Lightly spray the air fryer basket with non-stick cooking spray.
  7. Place the quesadilla in the air fryer basket and cook for 8-10 minutes, flipping halfway through, until the tortillas are golden and the cheese is melted.
  8. Remove from the air fryer, let cool for a minute, then cut into wedges and serve.

Notes

  • Feel free to add other ingredients like bell peppers or onions for extra flavor.
  • Serve with salsa or sour cream for dipping.
