A quick and easy recipe for delicious mushroom and spinach quesadillas made in the air fryer.
Ingredients

- 2 large flour tortillas
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté the mushrooms until they are soft and golden brown, about 5 minutes.
- Add the chopped spinach and garlic powder to the mushrooms, cooking until the spinach is wilted. Season with salt and pepper to taste.
- On one tortilla, layer half of the cheese, then spread the mushroom and spinach mixture evenly over it.
- Top with the remaining cheese and place the second tortilla on top.
- Lightly spray the air fryer basket with non-stick cooking spray.
- Place the quesadilla in the air fryer basket and cook for 8-10 minutes, flipping halfway through, until the tortillas are golden and the cheese is melted.
- Remove from the air fryer, let cool for a minute, then cut into wedges and serve.
Notes
- Feel free to add other ingredients like bell peppers or onions for extra flavor.
- Serve with salsa or sour cream for dipping.
