Description
Delicious and healthy stuffed bell peppers cooked perfectly in an air fryer.
Ingredients

- 4 large bell peppers (any color)
- 1 pound ground turkey or beef
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your air fryer to 380°F (193°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the ground turkey or beef, cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper. Mix until well combined.
- Stuff each bell pepper with the mixture, packing it in tightly.
- Sprinkle cheese on top of each stuffed pepper.
- Place the stuffed peppers in the air fryer basket, standing upright. You may need to do this in batches.
- Air fry the stuffed peppers at 380°F (193°C) for 12-15 minutes, or until the peppers are tender and the meat is fully cooked.
- Garnish with fresh cilantro if desired and serve warm.
Notes
- You can customize the filling by adding diced tomatoes, onions, or spices.
- For a vegetarian option, substitute ground meat with lentils or quinoa.
