Description

Delicious and healthy stuffed bell peppers cooked perfectly in an air fryer.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground turkey or beef
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your air fryer to 380°F (193°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the ground turkey or beef, cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper. Mix until well combined.
  4. Stuff each bell pepper with the mixture, packing it in tightly.
  5. Sprinkle cheese on top of each stuffed pepper.
  6. Place the stuffed peppers in the air fryer basket, standing upright. You may need to do this in batches.
  7. Air fry the stuffed peppers at 380°F (193°C) for 12-15 minutes, or until the peppers are tender and the meat is fully cooked.
  8. Garnish with fresh cilantro if desired and serve warm.
