Ingredients

  • 4 medium zucchinis, halved lengthwise
  • 1 lb ground turkey or beef
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Scoop out the center of each zucchini half using a spoon, leaving about 1/4 inch of flesh on the sides.
  3. In a skillet over medium heat, cook the ground turkey or beef until browned. Drain any excess fat.
  4. Add the diced tomatoes, bell peppers, onion, garlic powder, Italian seasoning, salt, and pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  5. Remove the skillet from heat and stir in 1/2 cup of shredded mozzarella cheese.
  6. Stuff each zucchini half with the meat mixture, pressing down gently to pack it in.
  7. Spray the air fryer basket with olive oil spray. Place the stuffed zucchini boats in the basket in a single layer.
  8. Air fry for 10-12 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  9. Remove from the air fryer and sprinkle the remaining mozzarella cheese on top. Air fry for an additional 2-3 minutes until the cheese is melted.
  10. Serve warm and enjoy!
