- 4 medium zucchinis, halved lengthwise
- 1 lb ground turkey or beef
- 1 cup diced tomatoes (fresh or canned)
- 1 cup bell peppers, diced
- 1/2 cup onion, diced
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the air fryer to 375°F (190°C).
- Scoop out the center of each zucchini half using a spoon, leaving about 1/4 inch of flesh on the sides.
- In a skillet over medium heat, cook the ground turkey or beef until browned. Drain any excess fat.
- Add the diced tomatoes, bell peppers, onion, garlic powder, Italian seasoning, salt, and pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- Remove the skillet from heat and stir in 1/2 cup of shredded mozzarella cheese.
- Stuff each zucchini half with the meat mixture, pressing down gently to pack it in.
- Spray the air fryer basket with olive oil spray. Place the stuffed zucchini boats in the basket in a single layer.
- Air fry for 10-12 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Remove from the air fryer and sprinkle the remaining mozzarella cheese on top. Air fry for an additional 2-3 minutes until the cheese is melted.
- Serve warm and enjoy!
