Crispy and delicious air fryer vegetable spring rolls, packed with fresh vegetables and served with a dipping sauce.
Ingredients

- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1/2 cup bean sprouts
- 1/2 cup bell peppers, thinly sliced
- 1/4 cup green onions, chopped
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 8 spring roll wrappers
- Cooking spray or oil for coating
Instructions
- In a large bowl, combine shredded cabbage, carrots, bean sprouts, bell peppers, green onions, soy sauce, and sesame oil. Mix well.
- Take a spring roll wrapper and place it on a clean surface with a corner facing you. Spoon about 2 tablespoons of the vegetable filling onto the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly to form a spring roll. Repeat with remaining wrappers and filling.
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the spring rolls with cooking spray or brush with oil for a crispy finish.
- Arrange the spring rolls in a single layer in the air fryer basket, making sure they are not touching.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
Notes
- Feel free to customize the filling with your favorite vegetables.
- Make sure not to overfill the spring rolls to prevent them from bursting while cooking.
- For added flavor, consider adding minced garlic or ginger to the vegetable mixture.
