These crispy and delicious Air Fryer Zucchini and Corn Fritters are a perfect appetizer or side dish, made healthier with the air fryer.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. In a large bowl, combine the grated zucchini, corn, flour, cornmeal, eggs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
  2. Squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
  3. Preheat the air fryer to 375°F (190°C).
  4. Using a tablespoon or cookie scoop, drop spoonfuls of the mixture into the air fryer basket, flattening them slightly to form fritters. Make sure not to overcrowd the basket.
  5. Spray the tops of the fritters lightly with cooking spray.
  6. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the air fryer and let cool slightly before serving.

Notes

  • Serve with a dipping sauce of your choice, such as ranch or tzatziki.
  • For a spicier kick, add chopped jalapeños to the mixture.
  • Leftover fritters can be stored in the fridge for up to 3 days. Reheat in the air fryer for best results.
