Description
These crispy and delicious Air Fryer Zucchini and Corn Fritters are a perfect appetizer or side dish, made healthier with the air fryer.
Ingredients

- 2 medium zucchinis, grated
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray
Instructions
- In a large bowl, combine the grated zucchini, corn, flour, cornmeal, eggs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
- Squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
- Preheat the air fryer to 375°F (190°C).
- Using a tablespoon or cookie scoop, drop spoonfuls of the mixture into the air fryer basket, flattening them slightly to form fritters. Make sure not to overcrowd the basket.
- Spray the tops of the fritters lightly with cooking spray.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
Notes
- Serve with a dipping sauce of your choice, such as ranch or tzatziki.
- For a spicier kick, add chopped jalapeños to the mixture.
- Leftover fritters can be stored in the fridge for up to 3 days. Reheat in the air fryer for best results.
