- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Cooking spray
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture. Afterwards, use a clean towel to squeeze out any excess moisture.
- In a large bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion powder. Mix until well combined.
- Preheat the air fryer to 375°F (190°C).
- Form the zucchini mixture into small patties, about 2 inches in diameter.
- Spray the air fryer basket with cooking spray. Place the fritters in the basket in a single layer, making sure not to overcrowd.
- Cook in the air fryer for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and serve warm with your favorite dipping sauce.

- For added flavor, mix in fresh herbs like parsley or basil.
- Ensure the zucchini is well-drained to avoid soggy fritters.
- Store leftover fritters in an airtight container in the refrigerator for up to 3 days.
