- 1 lb beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 tablespoons soy sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 8 oz egg noodles
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium-high heat. Add beef and brown on all sides.
- Add chopped onion and minced garlic to the pot, sautéing until onion is translucent.
- Pour in beef broth, soy sauce, Worcestershire sauce, and dried thyme. Bring to a boil.
- Reduce heat to low, cover, and let simmer for 1.5 to 2 hours, or until beef is tender.
- Add egg noodles to the pot, stirring to combine. Cook according to noodle package instructions until tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
