A hearty and flavorful beef stew made easily in the Instant Pot, perfect for a comforting meal.

- 2 pounds beef chuck, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch (optional for thickening)
- 2 tablespoons water (optional for thickening)
Instructions
- Turn the Instant Pot to the sauté setting. Once hot, add olive oil and brown the beef in batches. Remove the beef and set aside.
- In the same pot, add chopped onion and garlic. Sauté until fragrant, about 2 minutes.
- Add the carrots and potatoes to the pot, then return the browned beef to the pot.
- Pour in the beef broth and Worcestershire sauce. Add thyme, salt, and pepper. Stir to combine.
- Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 35 minutes.
- Once the cooking time is complete, allow for a natural release for 10 minutes, then perform a quick release.
- If you prefer a thicker stew, mix cornstarch with water in a small bowl. Set the Instant Pot to sauté and stir in the mixture. Cook until thickened, about 2-3 minutes.
- Serve hot and enjoy!
Notes
- Feel free to add other vegetables like peas or green beans for added nutrition.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This stew can also be frozen for up to 3 months.
