A hearty and flavorful beef stew made easily in the Instant Pot, perfect for a comforting meal.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch (optional for thickening)
  • 2 tablespoons water (optional for thickening)

Instructions

  1. Turn the Instant Pot to the sauté setting. Once hot, add olive oil and brown the beef in batches. Remove the beef and set aside.
  2. In the same pot, add chopped onion and garlic. Sauté until fragrant, about 2 minutes.
  3. Add the carrots and potatoes to the pot, then return the browned beef to the pot.
  4. Pour in the beef broth and Worcestershire sauce. Add thyme, salt, and pepper. Stir to combine.
  5. Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 35 minutes.
  6. Once the cooking time is complete, allow for a natural release for 10 minutes, then perform a quick release.
  7. If you prefer a thicker stew, mix cornstarch with water in a small bowl. Set the Instant Pot to sauté and stir in the mixture. Cook until thickened, about 2-3 minutes.
  8. Serve hot and enjoy!

Notes

  • Feel free to add other vegetables like peas or green beans for added nutrition.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This stew can also be frozen for up to 3 months.
