Ingredients

  • 2 pounds beef sirloin, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional for thickening)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the beef tips and sear on all sides until browned. Remove and set aside.
  3. In the same skillet, add chopped onion and garlic. Sauté until softened.
  4. Return the beef to the skillet and add beef broth, Worcestershire sauce, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours until the beef is tender.
  6. If desired, stir in the cornstarch mixture to thicken the gravy and cook for an additional 5 minutes.
  7. Serve over rice or mashed potatoes and garnish with fresh parsley.
