  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup all-purpose flour
  • 2 eggs (beaten)
  • 1 cup bread crumbs (Italian seasoned)
  • 1/2 cup Parmesan cheese (grated)
  • 1 cup mozzarella cheese (shredded)
  • 1/4 cup olive oil (for frying)
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 2 cloves garlic (minced)
  • 1/4 cup butter
  • 1/2 cup additional Parmesan cheese (for Alfredo)
  • 2 tbsp parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of bread crumbs and grated Parmesan cheese.
  4. Dredge each chicken breast in flour, then dip in the egg, and finally coat with the bread crumb mixture, pressing to adhere.
  5. Heat olive oil in a large skillet over medium heat. Add the breaded chicken and cook until golden brown on both sides, about 3-4 minutes per side.
  6. Transfer the chicken to a baking dish, top with shredded mozzarella cheese, and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly.
  7. While the chicken is baking, cook the fettuccine according to package instructions. Drain and set aside.
  8. In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic and sauté for 30 seconds.
