A delicious twist on the classic grilled cheese, featuring savory birria beef and melty cheese.
Ingredients

- 2 cups cooked birria beef, shredded
- 4 slices of sourdough bread
- 1 cup shredded cheese (Oaxaca, mozzarella, or a blend)
- 2 tablespoons unsalted butter
- 1/2 cup birria consomé (for dipping)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Heat a skillet over medium heat.
- Butter one side of each slice of bread.
- On the unbuttered side of two slices, layer half of the shredded cheese, followed by the shredded birria beef, then the remaining cheese.
- Top with the other slices of bread, buttered side out.
- Place the sandwiches in the skillet and grill until golden brown and the cheese has melted, about 3-4 minutes per side.
- Remove from the skillet and let cool for a minute before slicing.
- Serve with warm birria consomé for dipping, garnished with fresh cilantro and lime wedges.
Notes
- For extra flavor, you can add pickled onions or jalapeños inside the sandwich.
- Make sure to use enough cheese to ensure a gooey filling.
- If you like your grilled cheese extra crispy, cook it on lower heat for a longer time.
