Ingredients

  • 2 cups cooked birria beef, shredded
  • 4 slices of sourdough bread
  • 1 cup shredded cheese (Oaxaca, mozzarella, or a blend)
  • 2 tablespoons unsalted butter
  • 1/2 cup birria consomé (for dipping)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. On the unbuttered side of two slices, layer half of the shredded cheese, followed by the shredded birria beef, then the remaining cheese.
  4. Top with the other slices of bread, buttered side out.
  5. Place the sandwiches in the skillet and grill until golden brown and the cheese has melted, about 3-4 minutes per side.
  6. Remove from the skillet and let cool for a minute before slicing.
  7. Serve with warm birria consomé for dipping, garnished with fresh cilantro and lime wedges.

Notes

  • For extra flavor, you can add pickled onions or jalapeños inside the sandwich.
  • Make sure to use enough cheese to ensure a gooey filling.
  • If you like your grilled cheese extra crispy, cook it on lower heat for a longer time.
