Ingredients

  • 2 cups birria beef
  • 8 corn tortillas
  • 2 cups mozzarella cheese
  • 1/2 cup queso fresco
  • 1/4 cup cilantro
  • 1/2 onion
  • for serving lime wedges
  • 1 cup birria broth
  • for cooking olive oil

Instructions

  1. Heat a skillet over medium heat and add a drizzle of olive oil.
  2. Place a tortilla in the skillet and sprinkle half of it with mozzarella cheese.
  3. Add a layer of shredded birria beef, followed by more mozzarella cheese and a sprinkle of queso fresco.
  4. Fold the tortilla over to create a half-moon shape and cook until golden brown and crispy on both sides, about 3-4 minutes per side.
  5. Remove from skillet and keep warm while you repeat with the remaining tortillas and filling.
  6. Serve the quesadillas hot, garnished with chopped cilantro, onion, and lime wedges, along with a side of birria broth for dipping.

Notes

  • For extra flavor, you can dip the tortillas in the birria broth before filling.
  • Feel free to add other toppings like avocado or salsa for additional flavor.
