- 2 cups birria beef
- 8 corn tortillas
- 2 cups mozzarella cheese
- 1/2 cup queso fresco
- 1/4 cup cilantro
- 1/2 onion
- for serving lime wedges
- 1 cup birria broth
- for cooking olive oil
Instructions
- Heat a skillet over medium heat and add a drizzle of olive oil.
- Place a tortilla in the skillet and sprinkle half of it with mozzarella cheese.
- Add a layer of shredded birria beef, followed by more mozzarella cheese and a sprinkle of queso fresco.
- Fold the tortilla over to create a half-moon shape and cook until golden brown and crispy on both sides, about 3-4 minutes per side.
- Remove from skillet and keep warm while you repeat with the remaining tortillas and filling.
- Serve the quesadillas hot, garnished with chopped cilantro, onion, and lime wedges, along with a side of birria broth for dipping.
Notes
- For extra flavor, you can dip the tortillas in the birria broth before filling.
- Feel free to add other toppings like avocado or salsa for additional flavor.
