- 1 1/2 cups Graham cracker crumbs
- 1/4 cup Granulated sugar
- 1/2 cup Unsalted butter, melted
- 16 oz Cream cheese, softened
- 2 large Eggs
- 1/2 cup Sour cream
- 1 teaspoon Vanilla extract
- 2 cups Fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add in the eggs, sour cream, and vanilla extract. Mix until well combined and smooth.
- Fold in the fresh blueberries gently into the cream cheese mixture.
- Pour the cheesecake mixture over the graham cracker crust in the baking pan.
- Bake for 35-40 minutes or until the center is set and slightly puffed.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours before slicing.
- Cut into bars and serve chilled.
Notes
- For the best texture, use room temperature cream cheese.
- Feel free to use frozen blueberries if fresh are not available; just fold them in while still frozen.
