Ingredients

  • 1 1/2 cups Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter, melted
  • 16 oz Cream cheese, softened
  • 2 large Eggs
  • 1/2 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese until smooth.
  5. Add in the eggs, sour cream, and vanilla extract. Mix until well combined and smooth.
  6. Fold in the fresh blueberries gently into the cream cheese mixture.
  7. Pour the cheesecake mixture over the graham cracker crust in the baking pan.
  8. Bake for 35-40 minutes or until the center is set and slightly puffed.
  9. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours before slicing.
  10. Cut into bars and serve chilled.

Notes

  • For the best texture, use room temperature cream cheese.
  • Feel free to use frozen blueberries if fresh are not available; just fold them in while still frozen.
