This brown butter banana bread is moist, flavorful, and has a rich nutty taste from the browned butter. Perfect for breakfast or as a snack!

- 1/2 cup (115g) unsalted butter
- 1 cup (200g) granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (120ml) sour cream or Greek yogurt
- 1/2 cup (75g) chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a saucepan, melt the butter over medium heat, stirring constantly until it turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.
- In a large bowl, combine the brown butter and sugar, mixing until well combined.
- Add the eggs, mashed bananas, and vanilla extract to the mixture, stirring until smooth.
- In a separate bowl, whisk together the baking soda, salt, and flour.
- Gradually add the dry ingredients to the banana mixture, alternating with the sour cream, mixing until just combined.
- Fold in the chopped nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure your bananas are very ripe for the best flavor.
- You can store the bread at room temperature for up to 3 days or in the refrigerator for up to a week.
