  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (120ml) sour cream or Greek yogurt
  • 1/2 cup (75g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a saucepan, melt the butter over medium heat, stirring constantly until it turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.
  3. In a large bowl, combine the brown butter and sugar, mixing until well combined.
  4. Add the eggs, mashed bananas, and vanilla extract to the mixture, stirring until smooth.
  5. In a separate bowl, whisk together the baking soda, salt, and flour.
  6. Gradually add the dry ingredients to the banana mixture, alternating with the sour cream, mixing until just combined.
  7. Fold in the chopped nuts if using.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
