- 4 ripe peaches, sliced

Instructions
- In a bowl, whisk together flour, granulated sugar, and salt.
- Pour in the browned butter and mix until crumbly.
- Add the ice water, a tablespoon at a time, until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine sliced peaches, lemon juice, cornstarch, and cinnamon. Toss to coat.
- On a lightly floured surface, roll out the dough into a 12-inch circle.
- Transfer the dough to a parchment-lined baking sheet.
- Place the peach mixture in the center of the dough, leaving a 2-inch border.
- Fold the edges of the dough over the peaches, pleating as necessary.
- Beat the egg and brush it over the crust. Sprinkle with coarse sugar.
- Bake for 35-40 minutes, until the crust is golden and the peaches are bubbly.
- Let cool slightly before serving.
Notes
- Feel free to substitute other stone fruits like nectarines or plums.
- Serve warm with vanilla ice cream for a delicious dessert.
