  • 1 tablespoon cornstarch
  • 1/4 teaspoon cinnamon
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. In a bowl, whisk together flour, granulated sugar, and salt.
  2. Pour in the browned butter and mix until crumbly.
  3. Add the ice water, a tablespoon at a time, until the dough comes together.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 400°F (200°C).
  6. In a large bowl, combine sliced peaches, lemon juice, cornstarch, and cinnamon. Toss to coat.
  7. On a lightly floured surface, roll out the dough into a 12-inch circle.
  8. Transfer the dough to a parchment-lined baking sheet.
  9. Place the peach mixture in the center of the dough, leaving a 2-inch border.
  10. Fold the edges of the dough over the peaches, pleating as necessary.
  11. Beat the egg and brush it over the crust. Sprinkle with coarse sugar.
  12. Bake for 35-40 minutes, until the crust is golden and the peaches are bubbly.
