  • 1 pint Butter Pecan Ice Cream (Store-bought or homemade)
  • 1 ½ cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Unsalted butter (Softened)
  • ½ cup Brown sugar (Packed)
  • ¼ cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • ½ cup Chopped pecans (Toasted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped pecans.
  6. Drop tablespoons of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Once cookies are cooled, scoop a generous amount of butter pecan ice cream onto the bottom of one cookie and top it with another cookie, pressing gently to form a sandwich.
  9. Repeat with remaining cookies and ice cream. Place the sandwiches in the freezer for at least 30 minutes to set.
