Ingredients

- 4 ears of corn, husked
- 2 cups cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Grill the corn for about 10-12 minutes, turning occasionally, until charred and cooked through.
- Remove the corn from the grill and let it cool slightly. Once cool, cut the kernels off the cob.
- In a large bowl, combine the charred corn, cherry tomatoes, red onion, jalapeño, and cilantro.
- Drizzle with lime juice and season with salt and pepper. Toss to combine.
- Serve immediately with tortilla chips or as a topping for tacos or grilled meats.
