Description

Ingredients

  • 4 ears of corn, husked
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Grill the corn for about 10-12 minutes, turning occasionally, until charred and cooked through.
  3. Remove the corn from the grill and let it cool slightly. Once cool, cut the kernels off the cob.
  4. In a large bowl, combine the charred corn, cherry tomatoes, red onion, jalapeño, and cilantro.
  5. Drizzle with lime juice and season with salt and pepper. Toss to combine.
  6. Serve immediately with tortilla chips or as a topping for tacos or grilled meats.
