A delicious and flavorful chicken rice dish that combines tender chicken with fragrant rice, perfect for a comforting meal.


Ingredients

  • 1 whole chicken, about 45 pounds
  • 4 cups chicken broth
  • 2 cups jasmine rice, rinsed
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt to taste
  • Chopped green onions for garnish
  • Cucumber slices for serving

Instructions

  1. In a large pot, place the whole chicken and cover with chicken broth. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 30-40 minutes, or until the chicken is cooked through.
  3. Remove the chicken from the pot and let it rest. Reserve the broth.
  4. In a separate pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
  5. Add the rinsed jasmine rice to the pan and stir to coat the rice with the oil, garlic, and ginger.
  6. Pour in 4 cups of the reserved chicken broth, bring to a boil, then reduce heat to low, cover, and cook for 15-20 minutes or until rice is tender.
  7. While the rice is cooking, carve the chicken into pieces.
  8. Serve the chicken over the rice, drizzling soy sauce on top, and garnish with chopped green onions and cucumber slices.

Notes

  • For added flavor, marinate the chicken in soy sauce before boiling.
  • You can also add vegetables like carrots or peas to the rice for more nutrition.
  • Serve with chili sauce for a spicy kick.
