- 1 whole chicken, about 4–5 pounds
- 4 cups chicken broth
- 2 cups jasmine rice, rinsed
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt to taste
- Chopped green onions for garnish
- Cucumber slices for serving
Instructions
- In a large pot, place the whole chicken and cover with chicken broth. Bring to a boil over medium heat.
- Reduce heat and simmer for about 30-40 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and let it rest. Reserve the broth.
- In a separate pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
- Add the rinsed jasmine rice to the pan and stir to coat the rice with the oil, garlic, and ginger.
- Pour in 4 cups of the reserved chicken broth, bring to a boil, then reduce heat to low, cover, and cook for 15-20 minutes or until rice is tender.
- While the rice is cooking, carve the chicken into pieces.
- Serve the chicken over the rice, drizzling soy sauce on top, and garnish with chopped green onions and cucumber slices.
Notes
- For added flavor, marinate the chicken in soy sauce before boiling.
- You can also add vegetables like carrots or peas to the rice for more nutrition.
- Serve with chili sauce for a spicy kick.
