- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
- Skewers (wooden or metal)
Instructions
- In a large bowl, whisk together olive oil, soy sauce, lemon juice, garlic, paprika, cumin, salt, black pepper, and cayenne pepper.
- Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- Feel free to add vegetables like bell peppers, onions, or zucchini to the skewers for added flavor and nutrition.
- For a sweeter marinade, add a tablespoon of honey or brown sugar.
- Serve with a side of tzatziki sauce or your favorite dipping sauce.
