Instructions

  1. In a medium saucepan, combine the Arborio rice, almond milk, sugar, salt, and cinnamon.
  2. Bring the mixture to a boil over medium heat, stirring frequently.
  3. Once it reaches a boil, reduce the heat to low and simmer for about 20 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally.
  4. Remove from heat and stir in the vanilla extract.
  5. Allow the pudding to cool to room temperature, then transfer it to the refrigerator and chill for at least 2 hours.
  6. Once chilled, serve the rice pudding in bowls or cups, and garnish with chopped almonds and raisins if desired.
