Instructions
- In a medium saucepan, combine the Arborio rice, almond milk, sugar, salt, and cinnamon.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Once it reaches a boil, reduce the heat to low and simmer for about 20 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally.
- Remove from heat and stir in the vanilla extract.
- Allow the pudding to cool to room temperature, then transfer it to the refrigerator and chill for at least 2 hours.
- Once chilled, serve the rice pudding in bowls or cups, and garnish with chopped almonds and raisins if desired.
Notes
- For a creamier texture, stir in an extra splash of almond milk before serving.
- Feel free to add other toppings like fresh fruits or coconut flakes.
